Banana Baileys & white Chocolate Cake
28cm round fixed cake tin (greased/floured)

3 cups of sugar
500gm butter
6 eggs
4 cups of plain flour
1 teaspoon of baking powder
3 mashed bananas
1 cup of Baileys Irish Cream
2 cups of white chocolate dots
Cream butter and sugar
Add eggs and beat well
Add bananas and baileys
Fold in flour, baking powder and white dots
Bake at 180 degrees for 1hr or until firm
Chocolate Ganache
2 parts Chocolate (white/Dark/Milk)
1 part Cream
Heat until chocolate melts and you have a smooth icing consistency. Dribble/Smooth over cake, refrigerate until set.

I think I done gained 5 pounds just by thinking of this cake - I don't like bananas but I know people who do ... might make it for them... :)
